Crock Pot Taco Soup

This recipe actually comes from Michelle Gleed (Chris). For my wedding shower 5 years ago I asked that everyone bring their favorite recipe. This is now our 4th year of marriage and I have just started cooking. Being at home full time has given me the time and desire to cook more often. This recipe is so good, and it makes enough you can freeze some for those days you don't feel like cooking. Thanks Michelle!!
  • 1 lb. ground beef
  • 1/2-1 cup onions
  • 4-6oz. can of green chilis
  • 28 oz. can diced tomatoes
  • 14 oz. pinto or kidney beans
  • 8 oz. tomato sauce
  • 15 oz. corn with juice
  • 2 tsp. cumin
  • 1 pkg. dry taco sesoning
  • 1-2 cups water (depending how soupy)
  • salt/pepper to taste
  • Cheese
  • Sour cream
  • Chips

1. Brown beef and onions in skillet, drain
2. Combine all ingredients in a crock pot except cheese, sour cream and chips
3. Cover, cook on low 4-6 hours
4. Ladle into bowls, add chips, cheese and sour cream
