- 2 tablespoons vegetable oil
- 1 1/2 pounds butternut squash, peeled, seeded, and cut into 1-inch chunks (about 5 cups)
- 1 medium onion, chopped
- 1 box (10 ounces) frozen corn, thawed
- 1 1/2 teaspoons curry powder
- Coarse salt and ground pepper
- 2 cans (14.5 ounces each) vegetable broth
- 1/2 cup heavy cream
- dash of nutmeg (the original recipe didn't call for it, but Alicia suggested it and I'm sorry I missed that notation when I made it the first time)
In a large heavy pot, heat oil over medium-high; add squash and onion. Cook until onion is soft, about 6 minutes. Add corn and curry powder; cook until curry is fragrant, about 2 minutes. Season with salt and pepper. Add broth and simmer until squash is tender, about 25 minutes. In a blender, blend half the soup until smooth. Return to pot and stir in cream; heat through over medium-low (do not boil).

Disclaimer: I'm the mean mom who will make my kids eat whatever I put in front of them or they go do bed without dinner. (Which rarely happens because they usually cave and then it only happens with McKenna) I grew up being very picky until we moved to Hawaii where my palate expanded (along with my waist) exponentially. Hawaii is a melting pot of people and flavors and I am very grateful for that. I also married someone who loves to cook and try new things...he'll try ANYTHING! So because I don't want my children to be as picky as I was, I try to get them to try new things all the time. I do have one exception, if I won't eat it, I won't make them eat it. (Although I do make them eat seafood since I know my inability to stomach it is mostly mental.) So it doesn't happen very often, but occasionally there are things even I won't eat and it's cereal for dinner. This recipe however, DOES NOT FIT INTO THAT CATERGORY!!! Chris and I LOVED this soup. More on that later. The kids though HATED it. All four of them, crying, gagging, sobbing at the table. Even Tyler who usually eats everything. After half an hour of this I realized that there was no way they were going to cave. So I did. It breaks my heart because this is Autumn in a bowl and is so good. I will make it again for Chris and I. In fact, he's campaigning for me to make it again tonight. We ate some Butternut Squash soup once at the Chef's Table (fancy shmancy local place) that was so good we licked the bowl, literally, and this wasn't a place where that was socially acceptable.
