Christmas Krumkakes

  • 2 Eggs
  • 1 cup Sugar
  • 1/2 cup Butter, softened
  • 1 tsp. Cardamom or anise flavoring (we use Cardamom)
  • 1 1/2 cups Flour
  • 1 scant cup Milk
Beat eggs well; add sugar, butter and cardamom or anise. Beat. Add flour and milk alternately and beat until smooth. Whole cardamom seed that has been shelled and freshly crushed with a rolling pin make for a more flavorful krumkake. Bake as directed. Makes about 50. After they have cooled we fill them with whipped cream. You can use the spray stuff but that would be cheating! :0)

Note to self: Chris uses the cardamom pods/seeds and grind them fresh with a mortar and pestle. You need a Krumkake iron which you can find here. Apparently they are pretty pricey these days. I KNOW we never paid that much for ours.

This piece goes directly over the burner on medium hat.
This piece is the actual iron. Spoon about 1 tsp. of batter in center of baking surface. Close iron and gently squeeze handles together. Bake 5-10 seconds before turning iron over to continue baking. Bake until cookie is a light golden brown. Remove quickly with a spatula and roll immediately on wooden cone to shape. Remove cone and cool semside down on wire rack.
