My poor recipe blog has been neglected. Not for lack of things I need to post, just lack of time. I had a whole bunch of recipes I was going to post and then didn't get to it before I left town. Now I'm overwhelmed with things around here before school starts and trying to catch my family blog up. So I'm trying something new. Hopefully this will remind me which recipes I want to actually post about. If I like them, I'll re-post them with my additions/changes. So, this is what's on the menu this week:
Chicken Parmigiana - I have no idea why we've NEVER made this! It's a pretty easy and tasty dish. Everyone loved this and had seconds. I didn't feel like making homemade sauce so I just used canned, but homemade would definitely be better. Then we served it over Angel Hair pasta. This one will definitely be making it into our dinner rotations.

Grilled Chicken Hoisin Wraps - This has become another favorite. In fact Tyler requested it for his birthday dinner. The first time I made it, I made the sesame noodles. They were ok but everyone was really just interested in the wraps. So since then, I've skipped the noodles. These are really yummy!

Savory Spiral Stuffed Rolls - This is a new recipe that I'm trying out this week. It looked pretty kid-friendly (which doesn't usually translate to adult-friendly) but we'll see.
Red Coconut Curry Noodles - We L.O.V.E. Curry around here. In all colors, dishes and heat. We buy it in bulk we use it so much. I am always trying out new ways to cook with it. So of course I can't wait to give this one a try. Here's to hoping it's super yummy!
Pasta with Pancetta and Leeks - I have never in my life cooked with Leeks. So I decided I need to venture out of my comfort zone and try something with Leeks. This recipe also called for Pancetta, which I haven't ever cooked with before either. Chris is the gourmet chef around here so this is more his thing. I think he'll be so proud of me for trying something new. I am looking forward to trying this one. It's more adult-friendly than kid-friendly but I hope the kids won't notice.
