Found on Pioneer Woman- 12 ounces, weight Pasta, Cooked Al Dente
- Reserved Pasta Water, If Needed
- 3 ounces, weight Chopped Pancetta
- 3 whole Leeks, Sliced Thin
- 1 Tablespoon Butter
- ½ cups Dry White Wine
- ½ cups Heavy Cream
- Salt And Freshly Ground Pepper, To Taste
- Parmesan Cheese, Shaved
Saute chopped pancetta until fat is rendered and it starts to brown. Add sliced leeks and cook for 8 minutes. When you add the leeks, you can also throw in a pat or two of butter if you want to. This’ll give the dish some scrumptious flavor. I add it after the bacon is browned because I don’t want the butter to brown. After 8 to 10 minutes, pour in wine, then cook an additional 1-2 minutes, until reduced. Reduce heat to low, then pour in cream. Add salt and pepper to taste. Stir in Parmesan shavings. Toss in pasta, adding a little pasta water to thin as needed. Serve with Parmesan shavings over the top—delicious!
Note to Self: This was another winner. I have never in my life cooked with Leeks. So I decided I need to venture out of my comfort zone and try something with Leeks. This recipe also called for Pancetta, which I haven't ever cooked with before either. Chris is the gourmet chef around here so this is more his thing. So I never actually got around to buying the pancetta but I really wanted to try this out tonight. So I would call my version, the poor mans version. First of all, if you have never cooked with leeks, follow the recipe over on Pioneer Woman because she shows you how to cut up the leeks with pretty pictures. At first I was going to omit the pancetta all together but I thought it would definitely be missing something, so I improvised. I had some bacon bits which I sauted in a little bit of bacon grease to give it that bacon flavor. I also used chicken broth and a little bit of white wine vinegar in place of the dry white wine. This came together so fast and was super delish! My girls were all whining about wanting macaroni and cheese because they didn't want to try something new but I made them eat this. They all LOVED it AND, they all had seconds. I can't wait to try it with the Pancetta next time!
