Thai Chicken Pizza

Quick & Easy Pizza Dough:
  • 1 package active dry yeast
  • 1 tsp white sugar
  • 1 cup warm water
  • 2 ½ cups Flour
  • 2Tbs olive oil
  • 1 tsp salt
  • Garlic powder, Italian seasoning, basil, oregano
  1. Preheat oven to 450 degrees. In a medium bowl, dissolve the yeast & sugar into warm water.
  2. Let stand until creamy, about 10 minutes.
  3. Stir in flour, salt, and oil. Also add your garlic powder, Italian seasoning, basil, & oregano.
  4. Mix with fork and hands until smooth. Let rest for 5 minutes.
  5. Turn dough out onto lightly floured surface, and pat or roll into a round or square crust
  6. Transfer crust to a lightly greased pizza pan, cookie sheet, or baker’s peel
  7. Bake in preheated oven for 10 minutes. Remove.
Peanut Chicken:
  • 4Tbs peanut butter
  • 4 Tbs soy sauce
  • 2 cloves minced garlic
  • 1 tsp ginger
  • 4 Tbs brown sugar
  • 2 baked chicken breasts, diced
  • pinch of red pepper flakes
  1. In a small saucepan on low heat stir together all the ingredients just until combined.
Pizza Toppings:
  • ½ bottle of La Choy duck sauce or sweet and sour sauce
  • 1 cucumber, sliced thinly
  • handful of bean sprouts
  • handful of chopped cilantro or fresh parsley
  • handful of chopped dry roasted peanuts
  • half a red bell pepper sliced or diced
  • 1 ½- 2 cups shredded Monterey jack and cheddar cheese blend
  1. After pre baking crust for about 10 minutes dough will be firm but still doughy.
  2. Remove from oven and spread a thin layer of Duck Sauce.
  3. Cover with shredded cheddar cheese.
  4. Top with peanut chicken mixture and red bell pepper slices.
  5. Bake 10-15 minutes until the cheese is bubbly and beginning to brown.
  6. Remove from oven and top with cucumber slices, bean sprouts, cilantro, and chopped peanuts.
Note to Self: As soon as I saw this recipe on my niece Alicia's food blog, I knew I HAD to try it. It sounded so yummy. Chris and I, LOVED this pizza. It was such a fun fusion of flavors. So many vegetables complimenting one another and the sweetness of the sauce. Soooo good. McKenna picked almost everything off and Brooklynn ate hers by picking certain things off and then eating those first then the crust. Tyler and Lauren both liked theirs. A definite keeper!
